It’s Texas, it’s late June, nearly July and that means it’s getting hot. Summer is here. That also means there’s fresh corn galore and you can find tomatoes that almost taste like tomatoes should. So here’s a fresh summer salad that makes a light, cool meal. Oh, and there’s bacon involved too.
Corn, Bacon, Feta, Tomato and Avocado Salad.
3 slices bacon, chopped into 1/4 inch pieces and cooked until crisp
2 ears fresh corn
2 large tomatoes, cored, quartered and chopped
1/2 cup feta cheese, crumbled (I used the kind flavored with basil and sun dried tomatoes)
2 avocados, diced
2 green onions, sliced into rings
Shuck the corn and stand it on one end, use a paring knife to slice down the sides to cut the kernels off. Do this in a bowl or pan, as they will go bouncing everywhere. Put them in your serving bowl. Add everything else and toss gently to combine. Add 3-4 Tablespoons of salad dressing to make it creamy, I use a honey mustard dressing. A lemon dill flavor would be good too.
You could also add some chopped bell pepper or fresh herbs or micro greens. If you’re feeling really ritzy, add some crabmeat.
