Easy basic green bean recipe, fresh, of course, this will make the best of any nice looking beans you might find. I like the Romano beans, long and flat ones, but basic green beans, if gotten fresh, are excellent, too.
1/4 cups water
1 pound green beans, trimmed or snapped into fork sized pieces
1 1/2 Tbl good olive oil
1/2 medium red onion, coarsely chopped
1/4 tsp freshly ground black pepper
1/4 cup coarsely chopped fresh parsley leaves
Salt, to taste
Bring the water to a boil in a large saucepan. Add the beans, bring the water back to a boil, cover and cook over high heat until done. Thicker beans take longer, thinner beans, less time. Pull one out and test it until you think it’s done. Transfer the beans to a serving dish and set them aside.
Heat the oil in the same saucepan. When it’s hot, add the onions and cook over high heat until translucent.
Return the beans to the pot and season to taste, add the parsley and toss again, serve.
