Caramelized Carrots
My hubby loves to snack on baby carrots so we always have some around. When I can’t seem to find a veggie to cook with dinner, sometimes the snacks get sacrificed as a side dish.

2 tsp olive oil
1 lb baby carrots
Salt and freshly ground pepper
1/2 tsp caraway
1 T honey

Heat olive oil in a large saucepan over high heat. Add carrots and stir until coated with oil. Add 1/4 cup water and caraway seeds, salt and pepper and cook covered, stirring occasionally until the water is gone and the carrots are cooked through. If the water is gone before the carrots are cooked, add a tablespoon or two water and continue cooking until done. They have more flavor if they’re lightly browned one one or two sides. Reduce heat to medium, add honey and cook, stirring frequently until carrots are caramelized, about 2-3 minutes. Serve immediately.
